Wine grapes used to produce our wines are the result of an accurate selection, based on the traditional wine-making process of Romagna. The ripening process is continuously and rigorously checked, in order to single out the best moment to harvest grapes. This is because it plays an important role in the making of white wines as well as in the making of red wines. As far as white wines are concerned, it determines the alcohol-to-acidity ratio. Contrarily, it determines the colour, the balance and the body of the red wines. The grapes are traditionally hand picked and only healthy bunches are selected.
RED GRAPES Red wines are produced by crushing and destemming the grapes into a tank and leaving the skins in contact with the juice throughout the fermentation. Production of “Sangiovese” and “Merlot”

WHITE GRAPES White wines are produced by mechanically crushing the grapes. Throughout the fermentation, the juice is left into a tank at stable temperature in order to preserve grape aromas. Production of “Trebbiano” and “Albana”
