Wine grapes used to produce our wines are the result of an accurate selection, based on the traditional wine-making process of Romagna. The ripening process is continuously and rigorously checked, in order to single out the best moment to harvest grapes. This is because it plays an important role in the making of white wines as well as in the making of red wines. As far as white wines are concerned, it determines the alcohol-to-acidity ratio. Contrarily, it determines the colour, the balance and the body of the red wines.
The grapes are traditionally hand picked and only healthy bunches are selected.
